Some dishes can be created and stored in bulk, e.g. Chilli, and these will have to be counted. The amount
you count should be entered into the Closing Stock column.This screen is also where you would enter wastage for any dishes, e.g. Chilli as above, or maybe an incorrect order from front-of-house. Data you enter here will be used in the calculations for the usage of each individual product, giving an accurate variance report.
